These quick gluten-free sugar cookie bars are made by mixing together gluten-free flour, baking powder, salt, vanilla extract, granulated sugar, eggs, freeze-dried strawberries, butter, and funfetti chocolate chips.
Mix dry ingredients together in a separate bowl and add slowly to the wet mixture.
Once combined and thoroughly mixed, pour in the freeze-dried strawberries and chocolate chips.
Press into a parchment paper-lined baking pan and bake in the oven for 20 minutes.
While the cookie bar is baking, mix together marshmallow fluff and 1 tablespoon powdered freeze-dried strawberries.
Take the cookie bars out of the oven and cool.
When the bars are completely cool, frost the top with marshmallow fluff and top with funfetti sprinkles.

Bars made with this recipe will be easy to cut into bars, but you need to wait until they are completely cooled. When cooled, they should taste like soft frosted sugar cookie bars.You can omit the chocolate chips and/or the freeze-dried strawberries.The cookie dough should be sticky enough to stick together but not too wet.
