Scrumptious Giant Gluten-Free M&M Cookie Skillet

This recipe is the perfect combination of sweet and salty (because of the salt). I love making this large cookie skillet because it's an elevated take on classic M&M cookies. Plus, this recipe is totally gluten-free!

Equipment

  • A 10 or 12 inch cast iron skillet
  • A rubber spatula
  • Mixing bowls

Ingredients
  

  • 2 sticks unsalted butter
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 eggs
  • ½ teaspoon vanilla extract
  • 2 ¼ cup gluten-free flour
  • 1 teaspoon baking soda
  • 1 teaspoon flaky salt
  • ¼ cup M&M’s
  • ¼ cup semi-sweet chocolate chips or chocolate chunks

Instructions
 

  • Preheat the oven to 350°F.
  • Melt the butter in the skillet over medium heat.
  • Pour in the granulated sugar and brown sugar and mix thoroughly.
  • In a separate bowl, combine all dry ingredients (besides the sugars which are already added).
  • Add both eggs and vanilla and combine well.
  • Pour the dry mixture into the butter mixture.
  • Mix thoroughly and carefully add M&M's and chocolate chunks.
  • Sprinkle the top of the dough with more M&M's.
  • Bake in the oven for 20 minutes.
  • Enjoy!
