Single Serve Blueberry Cobbler (gf)

This easy blueberry cobbler recipe is made with a handful of real fresh or frozen blueberries. It's a made-from-scratch dessert where the blueberries truly shine. It's a quick and easy dessert that takes less than half an hour to make. Plus, it's a single serving!

Equipment

  • A small baking dish
  • Two mixing bowls
  • A spatula

Ingredients
  

  • ¼ cup gluten-free oats
  • ½ cup gluten-free flour
  • 1 teaspoon baking powder
  • 1 tablespoon brown sugar
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon softened unsalted butter
  • ¼ teaspoon salt
  • 1 cup blueberries fresh or frozen

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a medium-sized bowl, combine the salted butter, oats, baking powder, flour, brown sugar, and salt. Mix with hands until the mixture is crumbly. Set aside.
  • In a small bowl, combine the blueberries, lemon juice, vanilla extract, and granulated sugar. Pour the mixture into a small baking dish and make sure the entire bottom is covered.
  • Crumble the oat mixture over the top of the blueberries. Evenly distribute the mixture.
  • Bake in the oven for 30 minutes. The crumble should be bubbling.
  • Let it cool down and enjoy!

Notes

The entire top does not have to be covered in the oat mixture. It's ok for the blueberries to peek through!
