Ingredients
  

  • cup granulated sugar
  • 1 stick unsalted butter softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups gluten-free flour
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup buttermilk
  • 1 cup semi-sweet chocolate chips
  • ¼ cup coarse sugar

Instructions
 

  • Preheat your oven to 425°F and prepare a muffin tin by greasing it or lining it with muffin cups.
  • In a large mixing bowl, cream together the sugar and butter until light and fluffy. Add the eggs and vanilla, and mix until well combined.
  • In a separate bowl, whisk together the gluten-free flour, salt, baking powder, and baking soda. Add the dry ingredients to the wet ingredients and mix until just combined.
  • Stir in the buttermilk and chocolate chips until evenly distributed.
  • Spoon the muffin batter into the prepared muffin tin, filling each cup all the way full. Sprinkle the coarse sugar and any additional chocolate chips on top of the muffins.
  • Bake in the oven for 6 minutes and then turn the temperature down to 375° and bake for 18 more minutes.
  • Allow the muffins to cool in the tin for a few minutes before removing them to a wire rack to cool completely. The tops should be golden brown.

Notes

To freeze muffins, wrap them tightly in plastic wrap or foil and place them in an airtight container or freezer bag. When you're ready to eat them, thaw the muffins at room temperature or in the microwave. You can also warm them up in the oven or toaster oven to restore their freshly baked texture.
