Equipment

  • A food processor
  • A microwave-safe bowl
  • A cookie scoop
  • A fork

Ingredients
  

  • ¾ cup cocoa powder
  • 2 small avocados
  • 3.5 ounces dark chocolate

Instructions
 

  • Melt the dark chocolate in a safe bowl placed over a pot of simmering water.
  • Scoop the flesh out of the avocados and place it in a food processor.
  • Add the melted chocolate to the food processor with the avocados. Pulse the mixture until it is smooth and well combined.
  • Use a cookie scoop to portion out the truffle mixture into small, evenly sized balls.
  • Use your hands to roll the truffle mixture into balls. Place them on a parchment-lined baking sheet and refrigerate until firm, about 1 hour.
  • Dip each truffle ball into the cocoa powder, coating it evenly. Use a fork to lift the truffle out of the chocolate and tap it gently on the side of the bowl to remove any excess chocolate.
  • Place the coated truffles back on the parchment-lined baking sheet. Serve chilled and enjoy!

Notes

You can make these truffles ahead of time and store them in the refrigerator or freezer until you are ready to serve them. Just make sure to store them in an airtight container to keep them fresh.
