This recipe for a gluten-free strawberry cake is the perfect way to showcase the amazing flavor of fresh strawberries. Ingredients
  

The Cake

  • 6 large eggs
  • 1 cup granulated sugar
  • 1 cup gluten-free flour
  • ½ teaspoon baking powder
  • 1 cup fresh strawberries sliced
  • ¼ teaspoon salt

The Caramel

  • 1 cup granulated sugar
  • ¼ cup unsalted butter

Instructions
 

  • Preheat oven to 350°F (175°C). Line 1 round cake pans with parchment paper.
  • Grease a cake pan and line the bottom with parchment paper.
  • To make the caramel, mix the granulated sugar and butter in a saucepan over medium heat. Stir until the sugar is dissolved and the mixture turns a golden brown color.
  • Pour the caramel into the bottom of the cake pan and spread it around until it's evenly distributed.
  • Arrange the sliced strawberries on top.
  • In a mixing bowl, whisk together the gluten-free flour, baking powder, and salt.
  • In a separate bowl, beat the eggs, granulated sugar, and teaspoon vanilla extract for about 3-5 minutes until light and fluffy.
  • Gradually add the flour mixture to the egg mixture, stirring until just combined.
  • Pour the cake batter over the strawberries.
  • Bake the cake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • Once the cake is done, remove from the oven and let them cool in the pan for 5 minutes.
  • Once the cake is cooled, flip it over on a clean plate and peel off the parchment paper.
  • Serve and enjoy your delicious gluten-free strawberry cake!

Notes

While this recipe specifically calls for gluten-free flour blend, you can use a different kind of gluten-free flour, such as almond flour, however, it may change the texture of the cake.
