Swirl Gluten Free Cinnamon Bread Recipe with Raisins

Cinnamon raisin bread

  • 1 ½ cups gluten free flour
  • cup yogurt I use coconut yogurt
  • cup unsalted butter melted
  • 1 tablespoon baking powder
  • ½ cup sugar
  • 2 teaspoons cinnamon
  • 1/1 cup raisins
  • ½ teaspoon salt
  • ¼ cup granulated sugar for filling mixture
  • ¼ cup brown sugar for filling mixture
  • 1 cup milk I use almond
  • 1 egg
  • 1 teaspoon vanilla extract

Drizzle (optional)

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions
 

The Bread

  • Preheat the oven to 50 degrees and line a loaf pan with parchment paper.
  • Combine egg, yogurt, and butter in a large bowl. Whisk in the ½ cup sugar and vanilla extract.
  • In a separate bowl, combine baking powder and gluten free flour. Slowly fold into the wet mixture.
  • Once the mixture is combined, add the milk and whisk until there are no lumps.
  • To make the filling, combine ¼ cup granulated sugar, ¼ cup brown sugar, and 2 teaspoons cinnamon.
  • Pour half the bread batter into the prepared loaf pan. Top with half the filling mixture. Top with remaining bread batter and top with the remaining filling mixture.
  • Take a knife and wiggle it down the center of the bread, making swirls of cinnamon sugar.
  • Bake in the oven for 50 minutes.

The Drizzle

  • Combine powdered sugar, milk, vanilla extract, and ground cinnamon in a bowl.
  • Drizzle over the top of the bread after it is out of the oven.
