  • 1 pound chicken breasts boneless and skinless
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup gluten free bread crumbs
  • 2 tablespoons olive oil

Instructions
 

  • Season the chicken cutlets with salt and black pepper on both sides.
  • Pour the gluten-free breadcrumbs onto a plate or shallow dish. Press each chicken cutlet into the breadcrumbs to coat both sides, making sure to press the breadcrumbs into the chicken so they stick well.
  • Heat a skillet over medium-high heat and add a tablespoon of olive oil.
  • Once the skillet is hot, add the chicken cutlets one at a time into the hot oil. Cook for 4 minutes on each side until the breading is crispy and the chicken is cooked through. You can also use an iron skillet for better results.
  • If you're making a large batch of chicken cutlets, you can place them on a sheet of paper towel to absorb any excess oil.
  • To ensure that the chicken is cooked to a safe internal temperature, use a meat thermometer to check that the chicken has reached an internal temperature of at least 165°F (75°C).
