Ingredients
  

  • 8 ounces plain cream cheese softened
  • ¼ cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 20 fresh raspberries
  • Gluten-free pie crust
  • 1 egg

Instructions
 

  • Preheat the oven to 350 degrees.
  • Use a small round cookie cutter to cut rounds out of the gluten-free pie crust.
  • Beat the egg in a bowl and brush the pie crust rounds with the egg wash.
  • Line the pie crust rounds on a parchment-lined baking sheet and bake in the oven for 15-18 minutes or until golden brown.
  • Remove the pie crust rounds from the oven and let them cool completely.
  • In a large mixing bowl, whip the softened cream cheese, sugar, lemon juice, and vanilla extract together until smooth and creamy.
  • Transfer the cream cheese mixture to a piping bag fitted with the tip of your choice.
  • Pipe the cream cheese onto each pie crust round, creating a border around the edges.
  • Place a fresh raspberry on top of the cream cheese filling in the center of each round.
  • Repeat the process until all the Raspberry Cream Cheese Bites are complete.
