8 ounces plain cream cheese softened ¼ cup sugar 1 tablespoon lemon juice 1 teaspoon vanilla extract 20 fresh raspberries Gluten-free pie crust 1 egg
Preheat the oven to 350 degrees.
Use a small round cookie cutter to cut rounds out of the gluten-free pie crust.
Beat the egg in a bowl and brush the pie crust rounds with the egg wash.
Line the pie crust rounds on a parchment-lined baking sheet and bake in the oven for 15-18 minutes or until golden brown.
Remove the pie crust rounds from the oven and let them cool completely.
