Equipment

Ingredients

The Cake

  • 6 large eggs
  • 1 cup granulated sugar
  • 1 cup gluten-free flour
  • ½ teaspoon baking powder
  • 3 green apples
  • ¼ teaspoon salt

The Caramel

  • 1 cup brown sugar
  • ½ cup unsalted butter

Instructions

  • Preheat the oven to 350 degrees and line a 9-inch round cake pan with parchment paper. Set aside.
  • Slice the apples thinly and layer on top of the parchment paper in the cake pan.
  • In a large bowl, whisk the eggs until frothy using either a whisk or an electric mixer. Add the sugar and salt and whisk until combined.
  • Pour the baking powder and flour into the sugar and egg mixture. Mix thoroughly. Set aside.
  • Heat the brown sugar and butter in a saucepan over medium heat. Stir constantly until bubbling. This is the caramel.
  • Pour the caramel over the sliced apples in the cake pan. Top with the cake batter.
  • Bake in the oven for 30 minutes.
  • Remove from the oven and let cool. Flip the cake pan over on a plate and peel off the parchment paper.
  • Enjoy!

Notes

Store the cake in the refrigerator and cover it with plastic wrap. Stick toothpicks around the edges and middle of the cake and then lay the plastic wrap on top. This ensures there is no sticking. Store for up to three days.
