Easy Chocolate Dipped Watermelon Bites

I've always been fascinated by food pairings. Some foods are meant to be together while others are just plain wrong. But what happens when you combine things like chocolate and watermelon? You get delicious treats like these chocolate-covered watermelon bites. They're perfect for dessert parties, summer picnics or a fun treat for kids.

Ingredients
  

  • ¼ of a watermelon
  • 12 ounces dark chocolate
  • 1 tablespoon coconut oil
  • 1 teaspoon salt

Instructions
 

  • Line a baking sheet with parchment paper.
  • Cut watermelon into bite-sized pieces.
  • Place watermelon cubes on a lined baking sheet with space in between each cube.
  • Freeze for 15 minutes.
  • Combine chocolate and coconut oil. Melt in the microwave in 30-second intervals, stirring between intervals. The chocolate will be done when the chocolate is smooth.
  • Remove the watermelon cubes out of the freezer and dip them in the melted chocolate.
  • Quickly sprinkle with salt and place back on the lined baking sheet.
  • Let the watermelon thaw for 10 minutes before serving. Store in the freezer in an airtight container until serving.

Notes

Freeze the watermelon before dipping it in chocolate so the chocolate will stick.
