Easy Orange Almond Chocolate Bark

I just love a chocolate orange combination. I think it tastes so fabulous and fresh! Plus, I'm still recovering from COVID so I'm trying to eat a lot of vitamin C. Did you know orange peels have 3X the amount of vitamin C that the inside of an orange does?

Ingredients
  

  • 12 ounces dark chocolate
  • ½ cup unsalted roasted almonds
  • ¼ cup orange peel

Instructions
 

  • Prepare a quarter baking sheet with parchment paper and set aside.
  • Peel two oranges using a vegetable peeler. Set the peels aside.
  • Roughly chop the chocolate and pour it into a microwave-safe bowl. Microwave on high at 30-second intervals for 2 minutes, stirring in between.
  • Pour the whole almonds into the bowl of melted chocolate and stir.
  • Pour the chocolate almond mixture onto the parchment paper-lined baking sheet and use a spatula to spread evenly. Top with the orange peels.
  • Chill in the refrigerator for 20 minutes before roughly chopping the chocolate bark.
  • Store at room temperature in an airtight container.

Notes

Roughly chop the chocolate bark -- no need for the pieces to look perfect.
