Ingredients
  

  • cups Greek yogurt
  • cups milk of choice
  • 18 tablespoons chia seeds 1⅛ cups
  • 3 cups blueberries fresh or frozen
  • 1 tablespoon pure maple syrup
  • ½ teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • Pinch of salt
  • 1 tablespoon lemon zest added to chia mixture IF wanting lemon flavor

Instructions
 

  • Whisk Greek yogurt and milk until smooth.
  • Stir in chia seeds until evenly distributed.
  • Cover and refrigerate for at least 4 hours or overnight.
  • Simmer blueberries, maple syrup, cinnamon, lemon juice, and salt for 8-10 minutes.
  • Let blueberries cool completely.
  • Spoon pudding into bowls or jars and top with stewed blueberries.

Notes

To add lemon flavor:
Zest 1 tablespoon lemon zest into the chia pudding mixture.
