Ingredients
  

  • 2 cups gluten-free granola
  • 1 tablespoon corn starch
  • 1 pint fresh blueberries
  • ΒΌ cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 4 tablespoons butter cubed

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • In a medium bowl, combine the gluten-free granola and cubed butter. Mix well until the granola is evenly coated with butter. Set aside.
  • In another bowl, mix together the brown sugar, fresh blueberries, corn starch, lemon juice, and vanilla extract. Ensure that the blueberries are well coated with the mixture.
  • Pour the berry mixture into an 8x8 baking dish, spreading it out evenly.
  • Sprinkle the prepared granola mixture over the top of the berries, covering them completely.
  • Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the granola is golden brown and the berry mixture is bubbling around the edges.
  • Remove the crisp from the oven and allow it to cool for a few minutes before serving.
  • Serve warm and enjoy the delicious combination of sweet blueberries and crunchy granola.
