Ingredients
  

Chicken:

  • 2 chicken breast cutlets or 2 chicken breasts pounded thin
  • ½ cup gluten-free flour
  • ½ cup buffalo sauce plus extra for cooking
  • 1 cup gluten-free bread crumbs
  • 2 tablespoon butter
  • 4-5 celery stalks chopped thin
  • 1 small head romaine lettuce chopped thin

Homemade Ranch Dressing:

  • ½ cup Greek yogurt
  • 1 teaspoon powdered onion
  • 1 teaspoon dried dill
  • 1 teaspoon apple cider vinegar
  • Salt and pepper to taste

Instructions
 

Prep the Chicken:

  • Pound chicken breasts to ½ inch thickness. Dredge in gluten-free flour, coat in buffalo sauce, then press into gluten-free bread crumbs.

Cook the Chicken:

  • Heat butter in a pan. Sear chicken for 4-5 minutes per side, adding more buffalo sauce on top as it cooks.

Make the Celery Slaw:

  • Toss sliced celery and romaine lettuce in a homemade ranch dressing made from Greek yogurt, onion powder, dill, and apple cider vinegar.

Serve:

  • Plate the crispy buffalo chicken alongside a refreshing celery slaw.

Notes

For extra crispiness, finish the chicken in the oven for 5 minutes at 400°F.
Prep the celery slaw ahead of time, but toss with dressing just before serving for optimal crunch.
