  • 8 oz plain cream cheese softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh lemon juice
  • Pinch of salt
  • 1 cup dark chocolate chips or chopped dark chocolate
  • ½ cup sliced fresh strawberries

Instructions
 

  • Line a baking sheet with parchment paper.
  • In a bowl, beat the cream cheese, sugar, vanilla, lemon juice, and salt until smooth and fluffy.
  • Spread the cheesecake mixture into a thin, even layer (about ¼-inch thick).
  • Freeze for 5–7 minutes to firm up.
  • Melt dark chocolate using a double boiler or microwave in 20-second intervals, stirring until smooth.
  • Pour the melted chocolate over the chilled cheesecake layer and spread evenly.
  • Immediately press sliced strawberries on top.
  • Freeze for 30–45 minutes until fully set.
  • Lift the bark out by the parchment, cut into pieces, and serve chilled.

Notes

Ensure cream cheese is fully softened for a smooth base.
Don't skip the initial freezing step for the cheesecake layer.
Use high-quality dark chocolate for the best flavor.
Keep stored in the freezer and allow to thaw 1-2 minutes before serving.
For special occasions, try adding a white chocolate drizzle on top.
