Cherry Pistachio Chocolate Bites

Equipment

  • Saucepan + heatproof bowl (double-boiler) or microwave-safe bowl
  • Baking Sheet lined with parchment paper
  • Small spoon or cookie scoop

Ingredients
  

  • 8 oz 225 g high-quality dark chocolate chips or bars (70% cacao or higher)
  • 1 tablespoon coconut oil to help the chocolate set smoothly
  • 6 –8 fresh cherries pitted and halved
  • ½ cup shelled unsalted pistachios, roughly chopped
  • Pinch flaky sea salt

Instructions
 

  • Melt the chocolate.
  • Stovetop: Fill a small saucepan with 1–2 inches of water and bring to a gentle simmer. Place chocolate and coconut oil in a heatproof bowl set over (but not touching) the simmering water. Stir until smooth and glossy, about 3–4 minutes.
  • Microwave: Combine chocolate and coconut oil in a microwave-safe bowl. Heat in 30-second bursts, stirring between each, until fully melted and smooth.
  • Portion out the chocolate. Using a small spoon or a 1 tablespoon cookie scoop, drop 12 even mounds of melted chocolate onto the prepared baking sheet, spacing them about 1 inch apart.
  • Add cherries & pistachios.
  • Gently press 2 cherry halves into the center of each chocolate mound, cut-side down.
  • Sprinkle chopped pistachios around (and a few on top of) the cherries.
  • Finish & chill.
  • Lightly sprinkle each bite with a pinch of flaky sea salt.
  • Transfer the baking sheet to the fridge and chill until the chocolate is firm, about 30 minutes.
  • Serve & enjoy! Once set, peel each bite off the parchment and arrange on a serving platter.

Notes

Let melted chocolate cool for 2-3 minutes before adding cherries to prevent seizing
Choose firm but ripe cherries for best texture
Roughly chop pistachios for better distribution
These improve in flavor after chilling overnight
For freeze-dried cherries, sprinkle on top instead of pressing into chocolate
