  • 1 large apple Honeycrisp, Fuji, or Granny Smith
  • ¼ cup peanut butter
  • ½ cup chocolate chips dark, milk, or semi-sweet
  • 1 teaspoon coconut oil optional
  • Optional toppings: crushed nuts flaky salt, shredded coconut

Instructions
 

  • Slice the apples into ¼-inch thick rings and remove the core.
  • Pat them dry with a paper towel.
  • Spread peanut butter evenly over each apple ring.
  • Melt chocolate chips with coconut oil in a microwave-safe bowl, stirring every 20 seconds until smooth.
  • Dip each peanut butter-covered apple ring halfway into the melted chocolate.
  • Place on a parchment-lined baking sheet.
  • Refrigerate for 10-15 minutes until the chocolate sets.
