Instructions
Slice the apples into ¼-inch thick rings and remove the core.
Pat them dry with a paper towel.
Spread peanut butter evenly over each apple ring.
Melt chocolate chips with coconut oil in a microwave-safe bowl, stirring every 20 seconds until smooth.
Dip each peanut butter-covered apple ring halfway into the melted chocolate.
Place on a parchment-lined baking sheet.
Refrigerate for 10-15 minutes until the chocolate sets.
