Chocolate Dipped Pineapple Fries with Toasted Coconut

  • 1 whole fresh pineapple peeled and cored
  • 1 cup dark chocolate chips or chopped dark chocolate
  • ½ cup unsweetened coconut flakes

Instructions
 

  • Peel and core pineapple, then slice into fry-shaped sticks using a crinkle cutter. Pat dry with paper towels.
  • Toast coconut flakes in a dry skillet over medium heat until golden brown. Set aside to cool.
  • Melt chocolate using a double boiler or microwave in 20-second intervals, stirring between each until smooth.
  • Dip one end of each pineapple fry into melted chocolate, then immediately sprinkle with toasted coconut.
  • Place on parchment-lined baking sheet and chill for 10-15 minutes until chocolate is firm.
  • Serve chilled or at room temperature.

Notes

For extra crunch, chill the pineapple before dipping.
Work quickly when dipping as the cold pineapple causes chocolate to set faster.
Best enjoyed the day they're made for maximum freshness!
For a sweeter version, use milk or white chocolate instead of dark.
Make sure pineapple is thoroughly dried to ensure chocolate adheres properly.
