Ingredients
  

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 2 tablespoons taco seasoning
  • 8 corn tortillas
  • 1 ½ cups shredded cheddar cheese
  • Olive oil for brushing
  • 1 cup shredded lettuce
  • 1 avocado sliced
  • Salsa for serving

Instructions
 

  • Cook the Beef: In a large skillet, cook the ground beef over medium heat until browned. Add the chopped onion and cook until soft, about 5 minutes.
  • Season the Beef: Stir in the taco seasoning and ¼ cup of water. Simmer for 2-3 minutes, then remove from heat.
  • Prepare the Tacos: Preheat your oven to 375°F. Line a baking sheet with parchment paper and arrange the tortillas on the sheet. Brush each tortilla with olive oil on one side.
  • Assemble: On the non-oiled side, sprinkle cheese and spoon the beef mixture. Fold the tortillas and press to seal.
  • Bake: Bake for 15 minutes or until crispy.
  • Serve: Let the tacos cool slightly, then serve with lettuce, avocado, and salsa.

Notes

Prep ahead by making the beef mixture up to 2 days in advance.
Store leftovers in the fridge and reheat in the oven for crispiness.
