Ingredients
  

  • 1 cup cashews
  • 1 tablespoon warm water
  • 1 teaspoon vanilla extract
  • 7.5 ounces dark chocolate
  • 1 teaspoon coconut oil

Instructions
 

  • Prep: Line a baking sheet with cupcake liners.
  • Melt the Chocolate: Combine dark chocolate and coconut oil in a microwave-safe bowl, and melt.
  • Make Cashew Butter: In a food processor, blend cashews, warm water, and vanilla extract until smooth.
  • Assemble: Spread half the melted chocolate into the cupcake liners, add a layer of cashew butter, and top with the remaining chocolate.
  • Freeze: Let the cups set in the freezer for 15 minutes.
  • Store: Keep in the fridge or freezer, separating layers with parchment paper.
