  • cups Medjool dates pitted
  • 1 tablespoon natural peanut butter
  • 1 tablespoon almond flour
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • 4 oz dark chocolate melted (for dipping)

Instructions
 

  • Soak the pitted dates in warm water for 10 minutes to soften, then drain well.
  • Line an 8x8 inch pan with parchment paper, leaving overhang for easy removal.
  • In a food processor, blend the soaked dates with peanut butter, almond flour, vanilla, and salt until completely smooth and sticky, about 2-3 minutes.
  • Press the mixture firmly and evenly into the prepared pan.
  • Freeze for 1 hour until firm.
  • Remove from pan using parchment overhang and slice into 16 squares with a sharp knife.
  • Melt chocolate in microwave in 30-second intervals, stirring between each interval.
  • Dip each square in melted chocolate, allowing excess to drip off.
  • Place dipped squares on a parchment-lined tray and freeze for 15-20 minutes until chocolate sets.
