Equipment

  • Dutch oven or baking dish

Ingredients

  • 1 loaf gluten-free bread about 15–18 oz
  • 1 ¼ cups chicken stock
  • 1 egg
  • 1 tablespoon butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sage
  • 1 teaspoon powdered onion
  • 1 teaspoon parsley

Instructions

  • Preheat oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  • Cut the gluten-free bread into small cubes with a serrated knife.
  • Spread evenly on the prepared baking sheet and bake for 15–20 minutes, stirring halfway through, until the cubes are dry but not browned.
  • In a medium bowl, whisk together the chicken stock and egg. Set aside.
  • Melt butter in a Dutch oven over medium heat.
  • Add the toasted bread cubes and sprinkle with sage, parsley, onion powder, salt, and black pepper. Toss gently to coat.
  • Pour the stock and egg mixture over the seasoned bread cubes. Stir until evenly moistened.
  • Cover the Dutch oven with foil or its lid and bake for 20 minutes.
  • Remove the cover and bake for another 10–15 minutes, until the top is golden and crisp.
  • Serve warm as a side dish — or use to stuff your turkey!

Notes

For extra flavor, sauté ¼ cup finely chopped onion or celery in the butter before adding the bread.
If using a different gluten-free bread brand, adjust broth slightly — some absorb more than others.
