1 can 15 oz black beans, drained and rinsed 3 large eggs ⅓ cup butter melted ½ cup cocoa powder ⅔ cup brown sugar ½ cup all purpose gluten-free flour: I use King Arthur’s 1 teaspoon vanilla extract ½ teaspoon baking powder ¼ teaspoon salt ¼ cup dark chocolate chips plus extra for topping Optional: ¼ teaspoon espresso powder
Preheat Oven: Set the oven to 350°F (175°C). Prepare your baking pan with parchment or non-stick spray.
Blend Ingredients: In a food processor, combine black beans, eggs, melted butter, cocoa powder, sugar, vanilla, baking powder, salt, and espresso powder (if using). Blend until smooth.
Fold in Chocolate Chips: Pour the batter into a bowl and gently mix in ¼ cup of chocolate chips.
Pour and Bake: Spread the batter evenly in the pan. Sprinkle more chocolate chips on top. Bake for 25-30 minutes.
Cool and Slice: Let cool completely before slicing. Store in an airtight container to keep them fresh.
