Frozen Greek Yogurt Cherry Bites with Matcha White Chocolate Dip

Ingredients
  

For the cherry-yogurt bites:

  • 2 cups fresh cherries pitted (about 200g)
  • 1 cup full-fat Greek yogurt 240g
  • 2 tablespoons honey or maple syrup

For the matcha white chocolate dip:

  • 6 oz 170g white chocolate chips or finely chopped white chocolate
  • 1 teaspoon culinary-grade matcha powder
  • 1 teaspoon coconut oil optional, for smoother consistency

Instructions
 

  • Prep the cherries: Pit the cherries and place them in a blender or food processor.
  • Make the cherry-yogurt mixture: Add the Greek yogurt and honey to the pitted cherries. Blend until smooth and evenly combined. Taste and add more honey if desired for sweetness.
  • Scoop and freeze: Line a baking sheet with parchment paper. Use a small cookie scoop or melon baller to portion the cherry-yogurt mixture into 1-inch spheres. Place on the prepared baking sheet and freeze for at least 2 hours until firm.
  • Prepare the matcha white chocolate dip: In a heatproof bowl set over (but not touching) simmering water, melt the white chocolate and coconut oil, stirring until silky-smooth. Remove from heat. Sieve the matcha powder directly over the melted chocolate and whisk briskly to eliminate any lumps.
  • Dip the frozen bites: Working quickly, remove a few frozen bites from the freezer. Dip each bite halfway into the matcha white chocolate, allowing excess to drip off. Return to the parchment-lined tray.
  • Set and serve: Once all bites are dipped, freeze for an additional 15 minutes to set the coating. Serve immediately or store in an airtight container.

Notes

Use culinary-grade matcha for the best flavor and color
Sieve the matcha powder to prevent lumps in the coating
If coating cracks when cold, let bites sit at room temperature for 1 minute before serving
Store in freezer for up to 2 weeks, separating layers with parchment paper
