Ingredients
  

Ingredients:

  • 1 ¼ cups gluten-free flour
  • 1 ¼ teaspoons baking powder
  • teaspoon salt
  • ½ teaspoon ground cardamom
  • teaspoon ground nutmeg
  • ½ teaspoon vanilla extract
  • cup butter melted
  • 1 egg
  • ½ cup apple cider
  • cup granulated sugar

For the topping:

  • ½ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • ¼ cup unsalted butter melted

Instructions
 

  • Preheat oven to 350°F. Line a muffin pan with cupcake liners.
  • In a small bowl, set aside the topping ingredients: ½ cup sugar, 1 tablespoon cinnamon, and ¼ cup melted butter.
  • In a large mixing bowl, whisk together the melted butter, egg, vanilla, apple cider, and ⅛ cup sugar.
  • In another bowl, whisk together the flour, baking powder, salt, cardamom, and nutmeg.
  • Add the dry ingredients to the wet mixture and stir until just combined. Do not overmix.
  • Scoop the batter evenly into the muffin liners and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the muffins cool slightly. Brush each with melted butter and roll in the cinnamon-sugar mixture until fully coated.
  • Serve warm and enjoy the apple cider flavor with every bite!

Use room temperature ingredients for best results
Don't overmix the batter - a few lumps are fine
