Chicken Filling:
- 2 cups shredded baked chicken
- 1 medium onion diced
- 1 small bell pepper diced
- 2 tablespoon butter
- 2 tablespoon gluten-free flour
- 1 cup milk
- ½ cup chicken broth
- Salt and pepper to taste
Cornbread Topping:
- ¾ cup gluten-free cornmeal
- ¼ cup gluten-free flour
- 1 tablespoon sugar optional
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup buttermilk
- 1 large egg
- 2 tablespoon melted butter
Preheat the oven to 375°F.
Sauté the onion and bell pepper in butter, set aside.
Make the roux with butter and gluten-free flour, then whisk in milk and chicken broth.
Stir in the chicken, onion, and bell pepper.
Make the cornbread batter and layer over the chicken mixture in a casserole dish.
Bake for 25-30 minutes or until golden brown.
Let cool slightly before serving.
