Ingredients
  

Chicken Filling:

  • 2 cups shredded baked chicken
  • 1 medium onion diced
  • 1 small bell pepper diced
  • 2 tablespoon butter
  • 2 tablespoon gluten-free flour
  • 1 cup milk
  • ½ cup chicken broth
  • Salt and pepper to taste

Cornbread Topping:

  • ¾ cup gluten-free cornmeal
  • ¼ cup gluten-free flour
  • 1 tablespoon sugar optional
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup buttermilk
  • 1 large egg
  • 2 tablespoon melted butter

Instructions
 

  • Preheat the oven to 375°F.
  • Sauté the onion and bell pepper in butter, set aside.
  • Make the roux with butter and gluten-free flour, then whisk in milk and chicken broth.
  • Stir in the chicken, onion, and bell pepper.
  • Make the cornbread batter and layer over the chicken mixture in a casserole dish.
  • Bake for 25-30 minutes or until golden brown.
  • Let cool slightly before serving.
