Gluten-Free Chocolate Pineapple

Ingredients
  

  • 1 can pineapple rings drained and patted dry
  • ½ cup heavy whipping cream
  • 2 tablespoon caramel sauce store-bought or homemade
  • ½ cup dark or semi-sweet chocolate chips
  • 1 teaspoon coconut oil optional, for smoother melting
  • 1 lime zested

Instructions
 

  • Make the Whipped Caramel Cream: In a chilled bowl, whip the heavy cream until soft peaks form. Gently fold in the caramel sauce until just combined. Transfer to a piping bag with a star or round tip.
  • Prep the Pineapple Rounds: Pat pineapple rounds dry again to ensure the cream sticks well. Pipe a swirl of caramel whipped cream into the center of each round.
  • Dip in Chocolate: Melt chocolate chips with coconut oil (if using) in the microwave in 20-second intervals, stirring between each, until smooth. Dip each pineapple round halfway into the chocolate and place on a parchment-lined tray.
  • Finish & Chill: Sprinkle freshly grated lime zest over the chocolate while it’s still soft. Refrigerate until the chocolate sets, about 15–20 minutes.

Notes

Thoroughly pat the pineapple dry.
Chill your bowl and whisk before whipping the cream.
Don't overwhip the cream.
Melt chocolate in short intervals.
Use good quality chocolate.
