Ingredients
  

  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 small onion chopped
  • ½ pound ground beef
  • ½ pound riced cauliflower
  • ¼ cup tomato paste
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano optional for extra flavor
  • Grated Parmesan cheese for topping
  • Gluten-free noodles of your choice

Instructions
 

  • Cook the Onions: In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  • Add the Ground Beef: Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Season with salt and pepper.
  • Incorporate the Cauliflower: Stir in the riced cauliflower and cook for another 3-4 minutes until it begins to soften.
  • Create the Sauce: Add the tomato paste, dried basil, and dried oregano (if using) to the skillet, stirring to coat the meat and cauliflower evenly. Let the sauce simmer for 5-7 minutes until it thickens slightly. Adjust seasoning with salt and pepper as needed.
  • Cook the Noodles: While the sauce is simmering, cook the gluten-free noodles according to the package instructions. Drain and set aside.
  • Assemble the Dish: Serve the meat sauce over the cooked gluten-free noodles. Top with grated Parmesan cheese.
  • Serve: Enjoy your delicious spaghetti meat sauce with a hint of basil and a hearty twist of cauliflower!

Notes

To save time, you can prep the riced cauliflower and chop the onion in advance. Store them in airtight containers in the refrigerator for up to two days.
