Ingredients
  

For the kefir:

  • 2 cups coconut kefir or greek yogurt
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla bean paste
  • ¼ teaspoon sea salt

For the peach puree:

  • 3 fresh peaches
  • ¼ cup maple syrup
  • 1 tablespoon arrowroot starch
  • 1 tablespoon lemon juice

Instructions
 

  • Prepare the Peach Puree: Combine maple syrup and arrowroot powder in a large saucepan. Slice the peaches and blend with lemon juice. Stir in the maple syrup mixture until bubbles form.
  • Assemble the Yogurt: In a large bowl, mix coconut kefir or Greek yogurt with the remaining ingredients.
  • Layer and Chill: Spoon the peach puree into glass jars followed by the yogurt mixture. Let it set in the fridge for at least 30 minutes.
