Kefir Cherry Chia Honey Popsicles with White Chocolate & Pistachios

Ingredients
  

  • 1 ½ cups plain kefir
  • 1 cup frozen or fresh cherries pitted
  • 2 tablespoons chia seeds
  • 3 tablespoons honey adjust to taste
  • 1 cup white chocolate chips for dipping
  • ¼ cup crushed pistachios for sprinkling

Instructions
 

  • In a blender, combine kefir, cherries, chia seeds, and honey. Blend until smooth and creamy.
  • Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks and freeze for at least 4–6 hours, or until completely solid.
  • Once the popsicles are frozen, melt the white chocolate in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth.
  • Quickly dip each frozen popsicle into the melted white chocolate, allowing the excess to drip off.
  • While the chocolate is still wet, sprinkle crushed pistachios over the top.
  • Place the dipped popsicles on a parchment-lined baking sheet and pop them back in the freezer for 10–15 minutes to set the chocolate. Enjoy!

Notes

Keep popsicles stored in an airtight container in the freezer for up to 2 weeks.
