  • cups plain Greek yogurt whole milk or 2% works best
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or maple syrup optional, for sweetness
  • 1 cup fresh pomegranate arils divided
  • 4 ounces dark chocolate chips or chopped bar
  • 1 teaspoon coconut oil or butter for melting chocolate

Instructions
 

  • Mix Yogurt Base: In a medium bowl, stir together Greek yogurt, vanilla extract, and honey (if using) until smooth and creamy.
  • Scoop and Freeze: Line a baking sheet with parchment paper. Drop spoonfuls (about 2 tablespoons each) of the yogurt mixture onto the sheet, forming little "blobs." Sprinkle half of the pomegranate arils evenly over the tops. Place the baking sheet in the freezer and freeze until firm, about 2-3 hours.
  • Melt Chocolate: Just before serving, melt the chocolate with coconut oil in a microwave-safe bowl in 20-30 second intervals, stirring until smooth.
  • Drizzle and Top: Remove the yogurt blobs from the freezer. Drizzle melted chocolate over each blob and quickly sprinkle the remaining pomegranate arils on top before the chocolate sets.
  • Serve or Store: Enjoy immediately for a crisp bite or store in an airtight container in the freezer for up to 2 weeks.

Notes

Use whole milk or 2% Greek yogurt for the creamiest texture when frozen
Work quickly when adding chocolate drizzle to prevent melting
Store between parchment paper layers to prevent sticking
Remove from freezer 2-3 minutes before serving for easier eating
