Ingredients
  

  • 2 small cucumbers thinly sliced
  • 1 cooked chicken breast shredded
  • 1 tablespoon toasted sesame seeds
  • ¼ cup fresh cilantro leaves chopped
  • ½ teaspoon powdered ginger
  • 1 tablespoon rice vinegar
  • 1 teaspoon soy sauce or tamari gluten-free
  • 1 tablespoon mayonnaise
  • ½ teaspoon sesame oil
  • Salt and pepper to taste
  • ¼ cup water to thin out dressing, add as much as desired
