  • 12 oz white chocolate chopped or chips
  • 1-2 teaspoon coconut oil
  • 8-10 fresh strawberries halved
  • ¼ cup shredded coconut flakes
  • 2 tablespoon Santa hat or Santa face sprinkles optional

Instructions
 

  • Line a baking sheet with parchment paper.
  • Add white chocolate and coconut oil to a microwave-safe bowl. Heat in 20-30 second intervals, stirring between each, until fully melted and glossy.
  • Pour the melted white chocolate onto the parchment and spread into an even layer about ¼ inch thick.
  • Arrange the strawberry halves cut-side down on the warm chocolate. Space them out so every piece of bark has its own Santa hat.
  • Sprinkle shredded coconut flakes above the pointed ends of the strawberries to create the fluffy hat trim. Add a Santa hat sprinkle or a small round sprinkle at the top for the pom-pom.
  • Place the tray in the fridge for 20-25 minutes, or until fully firm.
  • Once set, lift the bark off the parchment and break into large festive shards.

Notes

Use good-quality white chocolate for best results. Avoid "white morsels" which contain stabilizers.
Make sure strawberries are completely dry before placing on chocolate.
You can substitute vanilla almond bark for the white chocolate.
Work quickly once chocolate is melted as white chocolate sets fast.
