Strawberry Chia Chocolate Rounds

Ingredients
  

  • 1 cup chopped strawberries fresh or thawed from frozen
  • 1 tablespoon maple syrup
  • 3 tablespoons chia seeds
  • ¾ cup chocolate chips dairy-free if needed
  • 1 teaspoon coconut oil

Instructions
 

  • In a bowl, mash strawberries with a fork until juicy and broken down (small chunks are fine). Stir in maple syrup and chia seeds until well combined.
  • Let mixture sit for 10-15 minutes so it thickens slightly as chia seeds absorb liquid.
  • Line baking sheet with parchment paper. Scoop about 1 tablespoon of mixture and spoon onto sheet in small circles (about 2 inches wide). Repeat with remaining mixture.
  • Freeze rounds for 1-2 hours, or until solid.
  • Melt chocolate chips and coconut oil together (microwave in 20-second intervals or melt on stovetop). Stir until smooth.
  • Dip each frozen round halfway or fully into chocolate. Place back on parchment.
  • Freeze again for 15-20 minutes until chocolate is set.

Notes

Use completely thawed frozen strawberries and drain excess liquid to prevent ice crystals
Let chia mixture rest exactly 10-15 minutes for perfect consistency
Chocolate should be warm but not hot when dipping frozen rounds
Store in airtight container in freezer for up to 2 weeks
Serve straight from freezer for best texture
