Ingredients
  

Dough:

  • 3 cups gluten-free flour blend with or without xanthan gum
  • teaspoons xanthan gum omit if flour blend contains it
  • teaspoons active dry yeast 1 packet
  • 3 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 cup warm milk 110-115°F
  • ¼ cup warm water
  • 4 tablespoons butter melted
  • 2 large eggs room temperature

Apricot Filling:

  • 6 ounces dried apricots
  • 1 cup water
  • ¼ cup granulated sugar
  • 1 teaspoon lemon juice
  • ½ teaspoon vanilla extract
  • Pinch of salt

Topping:

  • 2 tablespoons milk
  • 1 tablespoon granulated sugar

Instructions
 

Make the Filling:

  • Combine apricots, water, sugar, and pinch of salt in saucepan. Bring to boil, then simmer 15-18 minutes until apricots are very soft.
  • Transfer to food processor with lemon juice and vanilla. Blend until smooth. Set aside to cool.

Make the Dough:

  • In mixer bowl, whisk together 1 cup flour, yeast, sugar, salt, and xanthan gum (if using).
  • Heat milk, water, and butter to 110-115°F (warm but not hot).
  • Pour warm liquid over dry ingredients. Mix on medium speed for 1 minute.
  • Add eggs one at a time, mixing well after each.
  • Gradually add remaining 2 cups flour, mixing until soft dough forms (dough will be sticky).
  • Beat on medium-high for 3 minutes.
  • Transfer to greased bowl, cover with damp towel, and let rise 45-60 minutes until doubled.

Shape and Bake:

  • Preheat oven to 350°F. Line two baking sheets with parchment.
  • On floured surface, roll dough to ½-inch thickness.
  • Cut into 3-inch squares using pizza cutter.
  • Place 1 heaping teaspoon filling in center of each square.
  • Fold all four corners to center and pinch together firmly to seal.
  • Place 2 inches apart on prepared baking sheets.
  • Cover and let rise 20-30 minutes until puffy.
  • Bake 18-20 minutes until golden brown.
  • Brush warm kolaches with milk and sprinkle with sugar.
  • Cool on wire rack.

Notes

Store kolaches in an airtight container at room temperature for up to 3 days.
