Ingredients

  • 16 ounces heavy whipped cream
  • 8 ounces marscapone cheese
  • ¼ cup granulated sugar
  • 2 teaspoons almond extract
  • 1 cup chilled espresso
  • 1 package gluten-free ladyfingers I recommend Schar’s Gluten Free Lady Fingers
  • ¼ cup dark cocoa powder

Instructions

  • Start by whipping the heavy cream, granulated sugar and almond extract until stiff peaks form.
  • Mix in the mascarpone cheese with the whipped cream mixture, until smooth.
  • Brew a cup of chilled espresso and use it to dip gluten-free ladyfingers, such as Schar's Gluten Free Ladyfingers, for a few seconds.
  • Assemble the tiramisu by layering the coffee-dipped ladyfingers in the bottom of a medium-sized glass dish, then spreading a generous amount of the cream mixture on top. Repeat until all ingredients have been used.
  • Dust the top with ¼ cup of dark cocoa powder.
  • Refrigerate the tiramisu for at least 2 hours, or overnight for best results. Serve and enjoy!

Notes

To preserve the flavors and texture of the tiramisu, it is best to store it in an airtight container, this will also keep it from being contaminated by other food in the refrigerator.
