Ingredients
  

The Dough:

  • cups warm water 110-115°F
  • 2 teaspoons granulated sugar
  • teaspoons active dry yeast
  • 4 cups gluten-free flour blend
  • 2 teaspoons xanthan gum omit if flour contains it
  • 2 teaspoons salt
  • ½ teaspoon garlic powder
  • 3 tablespoons olive oil

The Garlic Butter:

  • 1 stick 8 tablespoons unsalted butter, melted
  • 3 garlic cloves minced
  • 2 tablespoons fresh parsley minced
  • ¼ teaspoon salt

Instructions:

  • In large bowl, whisk together warm water and sugar. Sprinkle yeast on top and let bloom 5-10 minutes until foamy.
  • In mixer bowl, whisk together flour, xanthan gum, salt, and garlic powder.
  • Add yeast mixture and olive oil to dry ingredients. Mix with dough hook on medium speed for 3-4 minutes until dough comes together (it will be sticky).
  • Cover bowl with damp towel and let rise in warm place for 1 hour until doubled.
  • Meanwhile, mix melted butter, garlic, parsley, and salt. Set aside.
  • Preheat oven to 400°F. Line two baking sheets with parchment paper.
  • Punch down dough. On well-floured surface, roll dough to ½-inch thickness.
  • Cut dough into 1-inch wide strips, about 6 inches long.
  • To shape knots: Take one strip, tie it into a simple knot (like tying a shoelace once), leaving two ends sticking out.
  • Place knots 2 inches apart on prepared baking sheets.
  • Brush with half the garlic butter mixture.
  • Cover and let rise 30 minutes until puffy.
  • Bake 20-25 minutes until golden brown.
  • Remove from oven and immediately brush with remaining garlic butter.
  • Serve warm.
