Ingredients

  • 1 small seedless watermelon
  • 1 cup plain Greek yogurt full-fat or 2%
  • ½ cup roasted unsalted pistachios, finely chopped

Instructions

  • Cut the watermelon into fry-shaped sticks using a crinkle cutter or knife. Pat them dry gently with paper towels to help the yogurt stick.
  • Finely chop pistachios and place in a shallow bowl or plate.
  • Dip one end of each watermelon fry into Greek yogurt, letting any excess drip off.
  • Immediately sprinkle or gently press chopped pistachios onto the yogurt-coated end.
  • Arrange on a parchment-lined tray and chill for 10–15 minutes to help the yogurt set. Serve chilled for best texture.

Notes

Choose a watermelon that feels heavy for its size for best flavor
Make sure to pat the watermelon dry thoroughly so the yogurt adheres properly
These are best served immediately after preparation
For a fun variation, try rolling in toasted coconut or adding a drizzle of honey
Keep refrigerated until ready to serve for the best texture
