Ingredients
  

  • 2 chicken breasts whole
  • ¼ cup gluten-free flour I use King Arthur's Gluten Free Flour
  • 1 green bell pepper sliced. Can omit or use different color bell pepper.
  • 1 onion sliced
  • 1 14 oz can diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon curry powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoon olive oil or butter
  • 2 cups cooked white rice

Instructions
 

  • Dip raw chicken breasts lightly in gluten free flour on both sides.
  • Heat oil in a skillet and sear chicken breasts until golden brown. Remove and set aside.
  • Sauté onions and green peppers in the same skillet until soft.
  • Add tomatoes, curry powder, salt, and pepper. Stir well. Add chicken broth.
  • Return chicken to the skillet, cover, and simmer for 20-25 minutes.
  • Serve over cooked white rice.
