  • 4 links Chicken sausages sliced
  • 2 large Sweet potatoes cubed
  • 2 cups Brussels sprouts halved
  • 2 tablespoons Olive oil
  • Salt and pepper to taste

Chipotle Mayo

  • ¼ cup Mayonnaise
  • 2 tablespoons Chipotle sauce or 1-2 canned chipotle peppers
  • Lime juice juice of half a lime

Instructions
 

  • Preheat Oven to 400°F (200°C). Line a sheet pan with parchment paper.
  • Prepare Vegetables: Toss sweet potatoes and Brussels sprouts with olive oil, salt, and pepper.
  • Assemble on Sheet Pan: Spread veggies and chicken sausage in a single layer.
  • Roast for 20-25 minutes, stirring halfway through.
  • Make Chipotle Mayo: Whisk together mayo, chipotle sauce, and lime juice.
  • Serve: Divide into bowls and drizzle with chipotle mayo.

Stir halfway through roasting for even cooking.
