Ingredients
  

Cookies

  • 1 stick unsalted butter softened
  • cup dark brown sugar
  • ¼ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 ⅓ cup gluten-free flour
  • ½ teaspoon baking powder

Buttercream Frosting

  • 2 sticks unsalted butter softened
  • 4 cups powdered sugar
  • 1 tablespoon cold milk
  • 1 teaspoon vanilla extract
  • 2 - 3 drops pink food coloring

Instructions
 

The cookies

  • Preheat oven to 350°F.
  • Cream butter, add brown sugar, granulated sugar, and egg, and mix.
  • Add vanilla, then mix in dry ingredients.
  • Roll dough into balls.
  • Place on baking sheet and bake for 12-13 minutes.
  • Let cool before frosting

The buttercream frosting

  • In an electric mixer with paddle attachment, blend the butter until smooth.
  • Add powdered sugar, 1 cup at a time, until well combined.
  • Drizzle in cold milk and vanilla extract.
  • Once the frosting has reached a spreadable consistency, add in the pink food coloring.
