Ingredients
  

  • 1 ½ cups gluten-free all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup gluten-free chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
  • In a medium bowl, whisk together flour, baking soda, and salt.
  • Cream butter and sugars until fluffy, then add egg and vanilla.
  • Mix wet and dry ingredients, then fold in chocolate chips.
  • Divide dough into muffin cups and bake for 12-15 minutes.
  • Press centers down after baking, then cool before filling.

Notes

Chill dough for a chewier texture.
Fill with ice cream or whipped cream for an extra indulgent treat!
