For the Waffles:

  • 2 large eggs
  • 2 cups whole milk
  • 2 cups gluten-free flour blend with xanthan gum, like King Arthur or Bob's Red Mill 1-to-1
  • 1 stick 8 tablespoons unsalted butter, melted and cooled slightly
  • 2 tablespoons granulated sugar
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

For Assembly:

  • 14 ounces vanilla ice cream slightly softened
  • ½ cup mini chocolate chips
  • 2 tablespoons powdered sugar for dusting

Instructions
 

Make the Waffles:

  • In a large mixing bowl, whisk together the gluten-free flour, baking powder, salt, and granulated sugar.
  • In another bowl, whisk together the milk, eggs, vanilla extract, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Don't overmix - a few lumps are okay. Let batter rest for 5 minutes.
  • Preheat your waffle iron according to manufacturer's instructions.
  • Lightly grease the waffle iron with butter or cooking spray.
  • Pour batter into waffle maker (amount depends on your iron size) and cook for 3-5 minutes or until golden brown and crispy.
  • Remove waffles and place on a wire cooling rack. Repeat until all batter is used (should make about 12 waffle pieces).
  • Allow waffles to cool completely before assembling sandwiches.

Assemble the Sandwiches:

  • Remove ice cream from freezer 10-15 minutes before assembly to soften slightly.
  • Place a generous scoop (about 2-3 tablespoons) of softened ice cream on one waffle.
  • Top with a second waffle and gently press together.
  • Pour mini chocolate chips into a shallow dish. Roll the edges of each sandwich in the chocolate chips, pressing gently to help them stick.
  • Place assembled sandwiches on a baking sheet and freeze for 15-20 minutes to firm up.
  • Just before serving, dust lightly with powdered sugar.

Notes

You can use store-bought gluten-free waffles too, for a quick and easy fun waffle ice cream sandwich experience.
