  • 1 cup plain Greek yogurt
  • 2 tablespoons PB2 powder
  • 1 tablespoon honey or more to taste
  • 4 –5 fresh strawberries thinly sliced
  • 2 tablespoons dark chocolate chips melted

Instructions
 

  • Mix the base: In a bowl, stir together the yogurt, PB2 powder, and honey until smooth and fully combined.
  • Spread: Line a mini baking sheet or small tray with parchment paper. Pour the yogurt mixture onto the sheet and spread it evenly, about ½ inch thick.
  • Top it off: Arrange the sliced strawberries evenly over the yogurt.
  • Drizzle: Melt the dark chocolate chips (microwave in 20-second intervals, stirring between). Drizzle over the top using a spoon or fork.
  • Freeze: Place the tray in the freezer for at least 2–3 hours, or until fully frozen.
  • Break & serve: Once frozen, break the bark into pieces and enjoy! Store leftovers in an airtight container in the freezer.

Notes

Use full-fat Greek yogurt for the creamiest texture
Don't overmix the PB2 – just stir until combined to avoid a gummy texture
Pat strawberries dry before adding to prevent excess moisture
Let bark sit 2-3 minutes at room temperature before eating for perfect texture
Double the recipe and freeze in multiple mini trays for weekly meal prep
