Ingredients
  

  • 2 boneless skinless chicken breasts
  • ¼ cup gluten-free soy sauce tamari
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger minced or ½ teaspoon powdered ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 cup white rice
  • 2 cups broccoli florets
  • 1 tablespoon butter or olive oil for cooking

Instructions
 

  • Cook the rice: Rinse 1 cup of white rice under cold water. Cook according to package instructions or using a rice cooker.
  • Prepare the teriyaki sauce: In a small bowl, whisk together the gluten-free soy sauce, honey, rice vinegar, and ginger. Set aside.
  • Grill the chicken: Heat a grill pan over medium-high heat, brush with oil, and cook the chicken for 6-8 minutes per side until the internal temperature reaches 165°F.
  • Make the glaze: Simmer the prepared sauce and stir in the cornstarch slurry to thicken.
  • Steam the broccoli for 5 minutes.
  • Serve with rice and broccoli, drizzling the teriyaki glaze over the chicken.

Notes

For an extra boost of flavor, let the chicken marinate in the sauce for 30 minutes before cooking.
Pair this dish with white or brown rice for a more wholesome meal.
