For the Clusters:

  • 2 Sumo oranges, peeled and segmented (about 2½ cups)
  • ¾ cup Greek yogurt (plain or vanilla, full-fat or 2%)

For the Chocolate Coating:

  • 6 oz dark or semi-sweet chocolate, melted
  • 6 oz white chocolate, melted

Baking Sheet You'll need a rimmed baking sheet to freeze the yogurt clusters flat. The rim prevents any potential drips, and a standard half-sheet pan fits about 12 clusters comfortably with space between each one.

Parchment Paper or Silicone Baking Mat This is essential for easy removal once the clusters freeze. Parchment paper works perfectly, but I prefer reusable silicone mats because the clusters peel off effortlessly without any sticking.

Mixing Bowls You'll need one medium bowl for folding the oranges into yogurt, and two small bowls for melting your chocolates separately. Glass bowls work best for the chocolate because you can microwave them directly.

Paper Towels Not fancy, but crucial. You'll use these to thoroughly dry your orange segments before mixing them with yogurt. This step prevents excess moisture that would make the clusters slide apart.

Spoon or Small Cookie Scoop A tablespoon or small cookie scoop (about 1.5 tablespoons) helps you portion the clusters evenly. I like using a cookie scoop because it creates uniform clusters that look professional.

Instructions

Prepare the Orange Segments Peel both Sumo oranges and separate them into segments. Place the segments on paper towels and gently pat them dry, removing as much surface moisture as possible. This step is critical for helping the yogurt adhere properly. Roughly chop any extra-large segments in half so all pieces are roughly bite-sized.

Make the Yogurt Mixture In a medium bowl, add the Greek yogurt. Gently fold in the dried orange segments until each piece is coated with yogurt. The mixture should look chunky with visible orange pieces throughout.

Form the Clusters Line a baking sheet with parchment paper or a silicone mat. Using a spoon or small cookie scoop, drop spoonfuls of the yogurt-orange mixture onto the prepared sheet, creating clusters about 2 inches wide. You should get 10-12 clusters. Try to ensure each cluster has several orange pieces and isn't just yogurt.

Freeze the Clusters Place the baking sheet in the freezer and freeze for at least 3-4 hours, or until the clusters are completely solid. They should be firm to the touch and not soft in the center.

Melt the Chocolates When the clusters are frozen solid, melt your dark chocolate and white chocolate in separate bowls. I microwave each chocolate in 30-second intervals, stirring between each interval, until smooth and completely melted. Let the chocolate cool for 2-3 minutes before dipping so it's not too hot.

Dip the Clusters Working quickly so the clusters don't thaw, dip half of each frozen cluster into the dark chocolate, letting excess drip off. Place back on the parchment paper. Repeat with all clusters. Then dip the other half of each cluster into the white chocolate, creating a two-tone effect. If your clusters start to soften, pop them back in the freezer for 10 minutes before continuing.

Final Freeze Once all clusters are dipped, return the baking sheet to the freezer for at least 30 minutes to let the chocolate set completely. The chocolate should be hard and shiny when ready.

Serve and Store These clusters are best enjoyed straight from the freezer. Store any leftovers in an airtight container in the freezer for up to 2 weeks. Let them sit at room temperature for 2-3 minutes before eating if you prefer a slightly softer texture.

Tips for Success

Pat Those Oranges Dry I can't stress this enough. Excess moisture from the orange segments will prevent the yogurt from clinging properly and create icy puddles when frozen. Take an extra minute to really dry those segments.

Use Thick Greek Yogurt The thicker your yogurt, the better your clusters will hold together. I use full-fat Greek yogurt with at least 5% milkfat. If your yogurt seems runny, strain it through cheesecoth for 15 minutes to remove excess whey.

Don't Skip the Double Freeze Freezing the bare clusters completely solid before dipping ensures the chocolate sets immediately on contact, creating that satisfying crack when you bite into them. If you try to dip partially frozen clusters, the chocolate will melt and slide off.

Work Fast During Dipping Once you remove the clusters from the freezer, work quickly. I usually dip 4-5 at a time, then return the sheet to the freezer before dipping the next batch. This prevents the yogurt from softening.

Customize Your Chocolate Ratio Not everyone loves white chocolate. If you prefer all dark chocolate, use 12 oz total. You could also try milk chocolate, ruby chocolate, or even a drizzle of both chocolates over fully dark-dipped clusters.

Why I Love Making These Clusters

Beyond being delicious, these clusters scratch my creative itch during the winter months when I'm craving fresh fruit but most berries are expensive and flavorless.
