How To: Fluffy Gluten-Free Mini Victoria Sponge Cakes

This gluten-free mini victoria sponge cake recipe is perfect for any occasion. How you frost and decorate the cakes is up to you. I suggest dotting the cakes with freshly whipped cream and topping them with raspberries.

What is Sponge Cake

A classic British dessert, this light and airy cake is made from eggs whipped into a frenzy, then folded into a mixture of sugar, gluten-free flour, and baking powder. It's usually baked in a round cake pan, but I chose to bake mine in mini cake tins.

A classic British cake is made from eggs, flour, sugar, and baking powder. It's traditionally served at breakfast, but it's delicious any time of day!

The best part of this recipe is that it doesn’t require any special equipment. Just a bowl and a whisk will do! It’s also easy to adapt to suit gluten-free eaters.

Recipe step by step directions

  • Preheat the oven to 350 degrees.
  • Whisk eggs together vigorously in a bowl for 3 minutes.
  • Pour in sugar and vanilla extract and whisk again.
  • Add in flour and baking powder and mix to combine.
  • Pour into greased cake pans or mini cake tins.
  • Bake in the oven for 15 minutes or until a toothpick comes out clean.

Is your gluten-free Victoria sponge cake recipe nut free?

This is a nut-free cake recipe because there aren't any nuts used in the recipe. However, even though this is a nut-free cake, it still contains eggs, gluten-free flour sugar, vanilla extract, and baking powder. So, while this cake isn't made with nuts, it does contain other ingredients that could potentially cause allergies or sensitivities.

Always read the labels before you buy anything.

Can I make this recipe in a food processor or standing mixer?

You can do it either way. I alternate between hand mixing, a food processor, and a stand mixer.

Can I make this recipe by hand?

 A good old-fashioned silicone spatula or whisk is enough to mix the batter. Just make sure to mix until the egg froths.

Do I need any special equipment?

Mini baking tins and molds are essential to make this recipe as mini cakes; however, you can also use a regular cake pan to make a full-size cake. 

Does this recipe need xanthan gum?

You don't. The gluten-free flour blend I suggest using already contains xanthan gum.

Can I bake your gluten-free Victoria sponge cake with less sugar without sugar?

I always try to reduce the sugar as much as possible in my recipes. In this recipe, however, the entire ¾ cup of sugar is necessary.

How long does this recipe keep?

The cake should be stored in an air-tight container. If you want to freeze it, wrap it tightly in plastic wrap or foil and put it into a freezer bag.

Can I freeze the cakes?

You can freeze cakes for up to 3 months without any problems.
