    Pomegranate Sponge Cake

    Who else loves pomegranates? If you do, I have the perfect fall treat. 

    I live for pomegranate season. To me, pomegranates taste like candy! When I originally posted this recipe, a lot of people asked me for an easy way to de-seed the fruit because it can be so tricky. I cut the fruit into wedges, submerge the wedges into a big bowl of water, and de-seed under the water. This prevents any spraying or dreadful pomegranate stains.

    The Flour

    I always use Cup4Cup gluten-free flour. I love the taste, and my recipes almost always turn out using this flour. They also offer specialized flours like pizza flour and ancient grain flour.

    The Whipped Cream

    Freshly whipped cream really makes this recipe. The key is to slightly under whip the cream so it's soft. Add in a teaspoon of vanilla extract and a tablespoon of sugar and you have fantastic whipped cream!

    Pomegranates are best in the fall. They're a fruit that's native to Asia and Africa, but they have been cultivated for thousands of years. They were first domesticated by ancient Egyptians who used them as food or medicine. The Romans called it "the apple of love."     What is a gluten-free diet?

    Ingredients
      

    • 6 eggs
    • ½ cup sugar
    • 1 cup flour @cup4cup
    • ½ teaspoon baking powder

    Instructions
     

    • Preheat oven to 350.
    • Beat eggs and sugar together.
    • Add in flour and baking powder.
    • Pour into two greased round cake pans.
    • Bake for 30 minutes.
    • Cool cakes.
    • Top cake with fresh whipped cream and pomegranates.
    • Enjoy!
