    Single Serve Blueberry Crumble (gf)

    This easy blueberry crumble recipe is made with a handful of real fresh or frozen blueberries. It's a made-from-scratch dessert where the blueberries truly shine. It's a quick and easy dessert that takes less than half an hour to make. Plus, it's a single serving!

    This recipe really shines in the summer, but it's great in the winter when you want to be reminded of warmer weather.

    My single-serve blueberry crumble recipe was inspired by my fluffy strawberry marshmallow recipe.

    Ingredients

    • Gluten-free oats
    • Gluten-free flour
    • Brown sugar
    • Granulated sugar
    • Vanilla extract
    • Lemon juice
    • Softened unsalted butter
    • Salt
    • Blueberries, fresh or frozen
    • Baking powder

    Instructions

    Preheat the oven to 350 degrees.

    In a medium-sized bowl, combine the salted butter, oats, flour, baking powder, brown sugar, and salt. Mix with hands until the mixture is crumbly. Set aside.

    In a small bowl, combine the blueberries, lemon juice, vanilla extract, and granulated sugar. Pour the mixture into a small baking dish and make sure the entire bottom is covered.

    Crumble the oat mixture over the top of the blueberries. Evenly distribute the mixture.

    Bake in the oven for 30 minutes. The crumble should be bubbling.

    Let it cool down and enjoy!

    Hint: The entire top does not have to be covered in the oat mixture. It's ok for the blueberries to peek through!

    Equipment

    • A small baking dish
    • Two mixing bowls
    • A spatula

    Storage

    Loosley cover the top of the cooled crumble and store it at room temperature. It will keep for 3 days.

    Top tip

    Make sure the crumble is bubbling before removing it from the oven.
